    Technical Principles

    Water activity is defined as the ratio of the vapor pressure of water in a material (p) to the vapor pressure of pure water (p0) at the same temperature: Aw = p / p0

    This parameter ranges from 0 (completely dry) to 1.0 (pure water). Measurements are typically performed using chilled-mirror dew point sensors, capacitance sensors, or resistive electrolytic cells. These instruments determine equilibrium relative humidity by measuring the point at which water vapor in the headspace condenses or equilibrates with the sample. The relationship between water activity and moisture content can be described through sorption isotherms, which characterize how water interacts with the sample matrix. These data provide valuable insights into adsorption–desorption behavior, stability limits, and formulation robustness.
