Trans-vaccenic acid (C18:1 trans-11) is a monounsaturated trans-fatty acid, consisting of 18 carbon atoms and a double bond located at the 11th carbon position. Its structural formula is CH₃(CH₂)₅CH=CH(CH₂)₇COOH, with the double bond in a trans configuration. As a long-chain fatty acid, trans-vaccenic acid typically exists as an oily liquid with a low melting point and high oxidative stability. It is primarily found in the adipose tissue, dairy products, and meat of ruminant animals, particularly in high concentrations in milk and beef.
In the body, trans-vaccenic acid can be partially converted into conjugated linoleic acid (CLA), which is believed to have multiple health benefits, such as anti-cancer, anti-obesity, and immune-modulating effects. Therefore, trans-vaccenic acid is not only an important metabolic product but also serves as a precursor to CLA, making it a subject of study in functional foods. In industrial applications, trans-vaccenic acid and its derivatives can be used in the synthesis of cosmetics, pharmaceuticals, and biomaterials.
