Sinigrin, also known as allylglucosinolate, is a glucosinolate compound found predominantly in plants of the Brassicaceae family, such as mustard, broccoli, and Brussels sprouts. Sinigrin consists of a glucose moiety linked to a thioglucose group and an allyl isothiocyanate side chain, which contributes to its distinctive odor and taste.

Upon tissue damage, it is hydrolyzed by myrosinase enzymes, releasing allyl isothiocyanate, which acts as a potent antimicrobial and insecticidal agent.
