Quinic acid (QA), specifically (1R, 3R, 4R, 5R)-1,3,4,5-tetrahydroxycyclohexane-1-carboxylic acid, is a cyclohexane carboxylic acid found in various plants such as Achillea pseudoaleppica, Citrus reticulata, Coffea arabica, and Phagnalon saxatile subsp. Saxatile. Additionally, it is one of the bioactive components in large fungi such as Coprinus comatus. QA possesses multiple therapeutic properties, including antibacterial, antifungal, cytotoxic, antidiabetic, insecticidal, anticancer, antioxidant, and analgesic effects. In the body, quinic acid can be converted into various compounds, such as chicoric acid and caffeic acid, which play antioxidant and anti-inflammatory roles in both plants and animals. Analyzing the content of quinic acid and its metabolites in plants can help reveal their roles in plant growth, stress response, and metabolic regulation, thereby enhancing our understanding of physiological processes in plants. Moreover, quinic acid and its metabolites may serve as biomarkers, aiding in the early diagnosis and monitoring of metabolic diseases such as diabetes and obesity.
