The phenolic hydroxyl group is a common structural feature of polyphenols. In nature, polyphenols are often conjugated with sugars and organic acids. They can be categorized into three groups based on the number of aromatic rings and their binding affinities to different compounds: flavonoids, non-flavonoids, and tannins. Polyphenols have broad-spectrum applicability in preventing serious diseases such as cardiovascular diseases, neurodegenerative diseases, and cancer. They are also widely used as food additives to prevent lipid oxidation, delay the development of off-flavors, and improve color stability in various foods.
