Phe-Met (dipeptide phenylalanine-methionine) is composed of phenylalanine (Phe) and methionine (Met) linked by a peptide bond, with a chemical structure that includes a benzene ring and a sulfur-containing group. Phe-Met mainly originates from protein degradation products, and it can also be obtained through chemical synthesis. Its biological activities include modulating immune responses, antioxidant properties, and antibacterial activity. The metabolites of Phe-Met include the individual amino acids Phe and Met, produced through further hydrolysis, which play important roles in protein synthesis, neural transmission, and metabolic regulation. Analyzing the content of Phe-Met and its metabolites in plant and biological samples helps to study their roles in cellular metabolism, immune function, and antioxidant defense, providing data support for the development of novel bioproducts and dietary supplements.
