Oleuropein Analysis Service

Oleuropein is a major phenolic compound found in the leaves of the olive tree (Olea europaea L.), as well as in olive oil and fruit, accounting for 14% of the dry weight. This compound consists of a molecule of elenolic acid, which is linked via an ester bond to the catechol hydroxytyrosol, and is also connected to a glucose molecule through a glycosidic bond (Figure 1). Oleuropein exhibits a variety of pharmacological properties, including antioxidant, anti-inflammatory, anti-atherosclerotic, anticancer, antibacterial, and antiviral activities. In Mediterranean countries, it is used as a dietary supplement. Given all the reported benefits of oleuropein, it is essential to conduct qualitative and quantitative studies to accurately quantify this compound's content in food and pharmaceuticals, as well as to synthesize new compounds based on its structure.
