p-Hydroxycinnamic acid is an organic compound widely found in nature, belonging to the class of hydroxycinnamic acids. p-Hydroxycinnamic acid can be extracted from various plants, such as coffee, honey, berries, grapes, apples, and certain cereals. It typically exists as a secondary metabolite in plants, particularly in the biosynthetic pathways of polyphenolic compounds. The structure of this compound consists of a benzene ring, an ethylene chain, and a carboxylic acid group, with the hydroxyl group in the para position on the benzene ring, which endows it with significant biological activity and functional properties. In plants, it primarily functions as an antioxidant, scavenging free radicals and protecting cells from oxidative stress damage. p-Hydroxycinnamic acid also exhibits various pharmacological activities, such as antioxidant effects, anti-inflammatory effects, antibacterial and antiviral effects, and potential anticancer properties.
